Here’s the answer to one of the most-asked questions in the city — when is Benoit’s Wine Bar opening? The answer? In May.
“Early May, ideally,” proprietor Benoit Doucet said as he leaned against the ornate bar inside.
“It’s just about time to sell some wine.”
With the exception of the kitchen which is still waiting on some equipment, most of the establishment is complete, thanks to his own efforts and those of his girlfriend Kayle Robson and friends over the last 18 months. He’d like to find a piano for the small stage in one corner and there are a number of details that still need to be completed, but most of it is ready to go.
The bar will seat 56 people and Benoit anticipates four staff on duty catering to the needs of his customers.
Benoit will start business with a short list of wines that will change as he understands what tickles the palates of local oenophiles.
“We’ll start with a short list — wines I know and appreciate,” he said. “I think it will be a list of 20 wines that we’ll sell by the glass.”
